My hubbie is finally done with the shut down and I have three words for his mood last night- CRANKY,CRANKY, CRANKY! However, after he slept for 14 hours he seems to be feeling much better. My youngest son Blade has an interview at McDonalds today and I hope he gets the job. Poor kiddo has had an interview for almost every application he fills out and he has been on 15 interviews now but no job-yet! I wish I had as many interviews as my 19 year old son has had! My oldest son works for a graphics company but it is on call and part-time. He did not work at all in February or in May so I hope they call him in tomorrow morning. I didn't really eat last night I just warmed up some leftover eggs and gluten free waffles and let the kids fend for themselves. I am such a horrible mother! Letting my offspring find their own food! I figure they get to eat out almost every day and I have not had an enriched white flour bun for WEEKS now, so yeah at 22 and 19 they can totally find some left overs. I figured today I would share the recipe for my flax seed bread! I got this from pinterest and it was pinned by Demetria Johnson.

Flax seed bread

4 Tablespoons ground flax seed
1/2 teaspoon baking soda
the recipe calls for 2 tablespoons of butter but I use olive oil
2 eggs
Garlic Powder

I mix it all up and spray a plastic sandwich container with olive oil spray and pour the batter into the sandwich container and microwave for 3 minutes. Then I slice it in half and usually put some turkey breast or chicken breast on it with some daiya cheddar cheese. The sandwich meat I eat has no antibiotics, it is gluten free, and soy free. I must also mention I do not like to spend a lot of money so the gluten free flour and other ingredients I have been using have all been purchased on clearance-that includes the daiya cheese and the sandwich meat! Well, I have homework I need to do so I better hop to it. I will post tomorrow!

Dinner last night

It has been a L-O-N-G week at the Martin household! My husband has been working a "shutdown" and has been working 13+ hour days and today is the last day so he is ready for everything to be done. For those of you who are not sure what a "shutdown" is-think of it as "Extreme Makeover-Commercial Edition". You know, that television show where the family goes on vacation for 3 days and when they come back their entire house has been totally redone? Well, it is like that only for a company. Last night I decided that I would make Easy Mexican Casserole. I will post the recipe and a picture for you. I tried to make it as healthy as possible, substituting non-GMO and organic for most of the ingredients, but I couldn't afford to buy organic cheese so I bought Kroger brand. You know what I wonder? Who makes the decision about what "easy-open" means on packaging! The cheese I bought said it was "easy-open" and all I envision is that there is a gorilla in a room somewhere and if the gorilla doesn't get frustrated opening the package, then it is deemed "easy-open"! I have a butchers block that knives have disappeared from and so it holds 3 pairs of scissors for those "easy-open" packages! Sorry, wanted to make sure you understand my complete hatred for "easy-open" packages. I am trying to drag my family kicking and screaming into eating healthier. The other night I made breakfast for dinner. Waffles, eggs, sausage, and bacon, yeah-I know, not very healthy. It was cheap and that was what I was going for! The thing was that I made the waffles gluton free, and nobody noticed! I thought it was really weird too because when I made the sunflower seed cheese I mentioned in yesterdays post everybody pretty much freaked out. It is still good, I don't care what they say! I will be eating another wrap for lunch today. I am going to post a picture of the Easy Mexican Casserole and just keep in mind I substituted as many healthy options as possible and I ate a stuffed bell pepper. I have added the link as well!

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.
  3. Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.
  4. Bake in preheated oven for 30 minutes, or until hot and bubbly.

Healthy lunch

I am trying to eat healthy and I have to admit that after decades of shoveling crap into my body trying to eat healthier is not an easy task! I have always been a "sandwich" kinda girl and I miss the experience of assembling a sandwich and the first delicious bite and all the way to the last crumb. I have a picture of my lunch today that I am going to post later on but I will describe it a little bit before I do. I made a flaxseed wrap which is super easy-3 tablespoons of ground flax seed, some garlic powder (I use a couple teaspoons), 1/4 teaspoon of baking powder, a tablespoon of olive oil, and one egg. You mix it together and I scrape it all into a glass pie plate greased with some spray olive oil and microwave it for 2 minutes and the flax seed wrap is ready. Then I spread about a tablesppon of sunflower seed cheese on the wrap, put three slices of chicken lunch meat that is gluton and casein free and then top with a slice of daiya cheddar cheese. It is very good and I do not even miss white bread! I also make some flax seed sandwich bread that is very similar to the flax seed recipe and I will share that when I make it again. Just introducing myself!

I am new at this so please forgive me if I make some mistakes! I am going to post about things in my life-some awesome, other things not so much! I guess I will start by telling you a little bit about myself. I am 45 now and I am working on my doctorate degree but I also work part-time as a psychology instructor at a community college. I am looking for a full time job but nobody seems to think I have anything to offer!

 I am married and have two kids, they are 22 and 19 so they are not little any longer. I have two dogs and two cats all spoiled rotten to the core. I am writing my dissertation about extremely early intervention for infants that are "at-risk" for autism spectrum disorders. I am still early in the process but I am working on it (slowly). My oldest son has PDD-NOS (Pervasive Developmental Disorder-Not Otherwise Specified) and so I think about the challenges that he has faced when I began this journey.

I have always struggled with my weight and sadly my weight is winning the battle! I have just started to eat healthier-or at least try to! I am avoiding gluton, dairy, and sugar and I am actually feeling better! I have only lost about 3 pounds with a lot more to go but I am going to try to keep going.
