It has been a L-O-N-G week at the Martin household! My husband has been working a "shutdown" and has been working 13+ hour days and today is the last day so he is ready for everything to be done. For those of you who are not sure what a "shutdown" is-think of it as "Extreme Makeover-Commercial Edition". You know, that television show where the family goes on vacation for 3 days and when they come back their entire house has been totally redone? Well, it is like that only for a company. Last night I decided that I would make Easy Mexican Casserole. I will post the recipe and a picture for you. I tried to make it as healthy as possible, substituting non-GMO and organic for most of the ingredients, but I couldn't afford to buy organic cheese so I bought Kroger brand. You know what I wonder? Who makes the decision about what "easy-open" means on packaging! The cheese I bought said it was "easy-open" and all I envision is that there is a gorilla in a room somewhere and if the gorilla doesn't get frustrated opening the package, then it is deemed "easy-open"! I have a butchers block that knives have disappeared from and so it holds 3 pairs of scissors for those "easy-open" packages! Sorry, wanted to make sure you understand my complete hatred for "easy-open" packages. I am trying to drag my family kicking and screaming into eating healthier. The other night I made breakfast for dinner. Waffles, eggs, sausage, and bacon, yeah-I know, not very healthy. It was cheap and that was what I was going for! The thing was that I made the waffles gluton free, and nobody noticed! I thought it was really weird too because when I made the sunflower seed cheese I mentioned in yesterdays post everybody pretty much freaked out. It is still good, I don't care what they say! I will be eating another wrap for lunch today. I am going to post a picture of the Easy Mexican Casserole and just keep in mind I substituted as many healthy options as possible and I ate a stuffed bell pepper. I have added the link as well!
"This is an easy
and very tasty dish. I often substitute ground turkey and low fat dairy
products and it is still delicious! Serve with chips, salsa and green
salad."
In a large
skillet over medium-high heat, cook ground beef until no longer pink.
Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is
absorbed. Stir in beans, and heat through.
Spray a 9x13
baking dish with cooking spray. Spread crushed tortilla chips in dish,
and then spoon beef mixture over chips. Spread sour cream over beef, and
sprinkle olives, green onion, and tomato over the sour cream. Top with
Cheddar cheese.
Bake in preheated oven for 30 minutes, or until hot and bubbly.
