Healthy lunch
I am trying to eat healthy and I have to admit that after decades of shoveling crap into my body trying to eat healthier is not an easy task! I have always been a "sandwich" kinda girl and I miss the experience of assembling a sandwich and the first delicious bite and all the way to the last crumb. I have a picture of my lunch today that I am going to post later on but I will describe it a little bit before I do. I made a flaxseed wrap which is super easy-3 tablespoons of ground flax seed, some garlic powder (I use a couple teaspoons), 1/4 teaspoon of baking powder, a tablespoon of olive oil, and one egg. You mix it together and I scrape it all into a glass pie plate greased with some spray olive oil and microwave it for 2 minutes and the flax seed wrap is ready. Then I spread about a tablesppon of sunflower seed cheese on the wrap, put three slices of chicken lunch meat that is gluton and casein free and then top with a slice of daiya cheddar cheese. It is very good and I do not even miss white bread! I also make some flax seed sandwich bread that is very similar to the flax seed recipe and I will share that when I make it again.
