Hectic Day!

I have been busy today! My oldest son has a beautiful car-a 2001 Chrysler 300M, but it doesn't run. It worked fine until December and now it will not start. So I used my free AAA tow to have it towed to the repair shop. Right now I would be able to take him to work and other places he wants to go but at some point in time he might want to drive some where alone! It has not been running since about March now so I am sure he is anxious to get it fixed. At some point in time I would like to think I will get a full-time job and I wouldn't be able to take the kids places they want- or need- to go. That doesn't look like it will happen anytime soon though. It will be another month until my two summer classes start that I will be teaching this summer. Sadly, I have time to clean and organize but I do not have the motivation! I thought that today I would share one of my OWN recipes and not just one from pinterest. First, a back story about the recipe. When I was 19, the age of my youngest son, I went on an adventure trip to Florida. Florida is beautiful and the people there were so nice but the trip was terrible and life-changing in the worst way possible. One thing that did come out of my adventure was that I discovered Key Lime Pie. If you have never eaten Key Lime Pie in Key West, Florida pack up the car and the family and head there now! It is divine and I have never eaten another Key Lime Pie that is as good as the one from Key West. So since I am trying to eat healthier and I REALLY wanted some Key Lime Pie, I came up with a drink that is reminds me of that divine Key Lime Pie without the calories or fat.

Key Lime Frosty

1 cup of coconut milk (or almond milk)
1/2 cup of ice
2 Tablespoons of lime juice- you can use key limes if you can find them or just lime juice
Stevia to taste-I use about a Tablespoon

Blend in a blender, or slushy maker, or whatever you have. Pour into a cup and add a straw and drink in the yumminess! I don't know if yumminess actually counts as a word but it is really good.
